Inspired by Sweetgreen’s Hollywood Bowl, this version is Paleo and Whole 30 friendly.

For the Vinaigrette

  1. In a medium bowl, whisk together the balsamic vinegar, dijon mustard, honey
  2. Slowly whisk in olive oil until vinaigrette is thick and creamy.
  3. Add salt and pepper to taste.

For the Salad

  1. On a large platter, scatter the romaine lettuce and spinach to form base.
  2. Decoratively place the tomatoes, grapes, cucumber, jicima and chicken on top of the lettuce bed.
  3. Sprinkle slivered almonds on top.
  4. Drizzle vinaigrette on salad right before serving, or serve vinaigrette on the side.

Notes

This recipe will make more vinaigrette than you will need for the salad.  Leftover vinaigrette can be kept in the refrigerator for 2 weeks.

If you don’t need to follow a Paleo or Whole 30 diet, I strongly recommend adding: 1/2 c cooked wild rice and 1/4 c goat cheese.  These two ingredients contribute another dimension of flavor and texture.  All of it delicious!
